How can I add a FastForward hotkey for GameCube (Dolphin)? (plus some other questions...)

Looking at Dolphin, I see that a "Disable Emulation Speed Limit" command exists, which I assume can toggle a "Fast Forward" mode. However, it is not bound to a hotkey. So, first, I would like to know: (1) what why isn't it bound to a hotkey?, (2) how can I bind it myself? and (3) If I cannot bind "Fast Forward" to a key, how can I access the Dolphin settings from within the game? Hotkey+A onde the Xbox controller only minimizes Dolphin but I don't know how to access the settings from there.
One last question: is there a way for me to change the password/buttons to disable Kiosk Mode? I would like to replace it with a longer/harder sequence.

On another note, I have been using RetroBat for two weeks running several cores/emulators and this is the first I had to ask a human being for help. That is a sign of a great software, so thanks to everyone for that!
- OS: Windows 10 Pro 64-bit (fully updated)
RetroBat: 6.4.0-stable-win64
Settings: all set to AUTO
Controller: Xbox Series X gamepad (connected via USB cable)

Hello,
Dolphin does not have a ui that can be navigated with gamepad, so hotkey+A does not bring up a menu, as it does not exist in the emulator.
I've never seen a fast forward option in dolphin, maybe this is new. Where is it located ?
