Fighting games for home systems

Gamecube example:

i have configured all the keys for the games on the pax xbox 360, and everything works great, but if i wanted for example to play Bloody roar with the knobs of the coin op i have a way to configure player 1 and 2 with the knobs just for this game ?

It's possible with the dolphin core, and i don't know if ti's possible with Dolphin standalone.
